Mexican Hot Rice

An awesome Mexican dish of hot rice. A perfect side to your favorite Mexican meal. Mexican Hot Rice Print Serves: 4 Ingredients 1 cup Indian Basmati Rice, boiled, drained 1 Tbsp oil 1 Tbsp diced onion1 tsp diced green chilies 1 cup red ripe tomatoes, cubed 1 Tbsp raisins 1 tsp dry red chilies ~ 3 Tbsp pistachio 1 tsp red chili powder 1 tsp salt 1 tsp black pepper 1 tsp garlic, sliced Instructions Place a pan over medium heat. Add oil to pan and heat for about a minute or so. Add onion, green chilies, garlic, dry red chili and boiled rice, and cook for 5 minutes. Stir the rice and add all other ingredients. Cover mixture with a lid and cook for 10 minutes on high heat. Reduce heat let rice simmer for 5 minutes. Remove rice from heat and enjoy.
